Lemon Cookies






One of Michelle's coworkers brought these lemon cookies into work one day. We (Zack especially) would like to thank Bret for this recipe. 


Here's what you'll need:
Cookies:
1 box of lemon cake mix
2 eggs
1/2 cup oil (vegetable worked great)
1 Tbsp lemon juice


Icing:
1 Tbsp lemon juice (or more depending on the thickness of the icing)
1 cup powdered sugar


Here's what you do:
Preheat your oven to 350 degrees F.


Combine all ingredients in a mixing bowl or stand mixer.




Beat together until smooth.




Using a tablespoon to spoon out the cookie dough onto the tray. Try not to eat all of the dough before baking.




Bake for 10 minutes, switching the racks half way through.


While your cookies are baking, mix up the icing by adding the lemon juice to the powdered sugar. We actually used a bit more lemon juice to make a nice glaze.




Once your cookies are puffed up and just slightly brown around the edges, pull them from the oven and place on a wire rack or wax paper to cool.


Once they've cooled some, brush the tops of the cookies with icing.




Sprinkle a little powdered sugar over the top.
